I don't know about you, but I love a good pasta salad. I'll often grab whatever veg I have in the fridge, chop it up, sauté it and throw it together with some pasta, olive oil and salt.
We're thinking about adding one to our Plenty menu so I've been experimenting a bit. This recipe is inspired by Bon Appetit and I think it's a real winner. Plus SO easy and sure to please the entire family. You can always substitute whatever veg you have handy.
